This last week of black history month I want to share a carrot juice recipe. It’s inspired by Kukuwa Kyereboah-Nuamah’s book African Health Secrets.
One thing I love about this book are the first hand stories she shares of the “organic lifestyle” her, her mother, her grandmother, and her great grandmother practiced in Ghana.
Organic practices that are often seen as “white” people invented things. (I’m speaking from my perspective)
Things like juicing vegetables and colon cleansing practices.
Both of which I took a long time to even consider exploring because it was so ingrained in me that it’s a “white” people thing.
I really love that she describes how her mother and grandmother would make green juices with what sounds like a mortar, pestle and ancestral brilliance. And that they learned of the health benefits and practices from what was passed down by her great grandmother.
In addition, this legacy of health, wisdom and brilliance is what Kukuwa daughter’s can lean on and benefit from today.

Health Benefits of Key Ingredient
Carrots are rich in carotenoids Carotenoids particularly beta-carotene is transformed into Vitamin A, one of the fat soluble vitamins our bodies need. This means fat (healthy fats, more on this in another post) help the absorption of Vitamin A into our bodies so it can support the healthy function of our vision, skin, bone growth, reproduction, immune function and more!

Ingredients
12 carrots, cut to fit your juicer or chopped for blender technique
1 apple, cored and coarsely chopped
2 inch of ginger, coarsely chopped
Water, for juicing in your blender technique
Recipe ( Slow juicer technique)
- Prep all ingredients.
- Turn on juicer and put in all ingredients in this order, carrot, ginger, apple
- Store juice in a jar for up to 3 days, serve and enjoy!
Recipe ( Juicing with your blender technique)
- Prep all ingredients
- Putt all prepped ingredients into blender
- Add 3 cups of water and blend for 1 to 2 mins
- Use a fine mesh sieve or nut milk bag to strain out the juice.
- Store juice in a jar for up to 3 days, serve and enjoy!
